2 large ripe mangoes, diced and pureed
2 (6 oz) containers vanilla yogurt
1/4 cup granola (more if you like)
diced mango for garnish
Make sure you are using fresh, ripe mangoes because when they ripen, they get sweeter. Peel the mangoes and dice the flesh. Puree them in a blender or processor until smooth.
Stir your vanilla yogurt until smooth. Layer flutes or goblet glasses with mango puree, yogurt and granola. Repeat with puree and yogurt, then top with diced mangoes and granola for garnish.
