Pumpkin Baked Oatmeal

Projected prep time: 5 minutes; Projected bake time: 35-40 minutes


Ingredients:

2 cups certified gluten-free rolled oats

2 large eggs

1 cup pumpkin puree

3/4 cup milk

1/2 cup packed dark brown sugar

1 1/2 Tbsp. oil

1 tsp. baking powder

1 tsp. cinnamon

1/4 tsp. kosher salt

1/8 tsp. ground ginger

Dash of ground cloves


Directions:

Preheat oven to 350 degrees.


Mix all ingredients and pour into an 8x8 baking dish. Bake 35 to 40 minutes, or until baked all the way through and feels somewhat firm to the touch.
