1lb. green beans, ends snapped off
1 small shallot, cut into rings
1 small roma tomato, cut into small pieces (optional)
2 tsp butter
salt and pepper
lemon wedges (optional)
Bring a medium pot of salted water to a boil. Add green beans and cook about 5-6 minutes (Smitten Kitchen suggests a cooking time of 3.5 minutes. I find this leaves the beans just a smidge squeaky...and...bleh). Remove from water and either rinse with cold water or plunge into an ice bath to stop cooking. Meanwhile, in a medium pan, melt butter and cook shallots until just golden. Add green beans to heat through. Garnish with diced tomato and serve with lemon wedges for added flavor. Salt and pepper to taste.
