Eclairs

Preheat oven to 400 degrees

For the Dough:
1 C water
1 stick of butter
1 C flour
4 eggs

1. In a saucepan, combine water and butter. Bring to a boil. Add the flour and stir, stir, stir until it forms a ball. Let cool for 10-15 minutes. Add eggs one at a time combining thoroughly after each egg is added. Place by spoonfuls or by piping onto a baking sheet. Bake for 30 to 35 minutes. Let cool completely.

For the Filling:
Make 1 box of vanilla cook and serve pudding according to the package directions and chill in the refridgerator until completely cold.

For the Chocolate Glaze:
1/2 C heavy whipping cream
1 C chocolate chips

Combine the cream and chocolate chips in a sauce pan. Over medium heat, stir constantly until it just comes to a boil and all of the chocolate is melted. Remove from heat and let cool completely.

Assembly:

Assemble after all of the components have had plenty of time to cool. First, cut the shells in half. By spoonfuls, fill each shell with the filling. Finally, generously drizzle the chocolate glaze over the top. Let them set up in the refrigerator for several hours before eating. These are great for entertaining because they can be made a day ahead.
