Pear Brownies

3 eggs
1 3/4 c sugar
1 t vanilla extract
3/4 c vegetable oil (increase to 1 cup if using apples)
1 heaping teaspoon cinnamon
1 t baking powder
1/2 t salt
2 c all-purpose flour
2 c diced pears (or apples)

Preaheat oven to 350­°.  Beat eggs and sugar in a medium-large mixing bowl until light and fluffy.  Add vanilla extract and oil. Stir in cinnamon.  Sift flour, salt, and baking powder into the wet ingredients and stir to combine.  Fold in pears.  Bake in a 9"x13" baking dish for 35-45 minutes.
