Greek Pasta Salad


For the dressing
4 cloves garlic, minced 

2 teaspoons dried oregano

2 teaspoons Dijon mustard
1/2 cup red wine vinegar
1 teaspoon salt

1 teaspoon black pepper

1/2 cup olive oil

For the salad
1 pound pasta such as fusilli bucati or gemelli

1 medium cucumber, peeled and chopped into 1/4 inch pieces

1 pint cherry tomatoes, halved

1/2 red onion, thinly sliced

8 ounces crumbled feta

3 cups baby spinach


Combine dressing ingredients in a small bowl and whisk until combined.

Cook the pasta according to package directions. Drain and rinse with cold water. Combine all ingredients in a large bowl. Chill, then serve.
