4th of July Jars

A Kocinera Original Recipe

Equipment: 2 large or 4 small glass jars

1 frozen pound cake, defrosted and cut in small cubes

2-3 cups whipped cream or 1 container Cool Whip

1 cup blueberries

About 15 strawberries, sliced

Optional: fresh mint, strawberries and blueberries for decoration

Before assembling the jars, cut off the corner of a plastic bag and fill it with the whipped cream (you may need to use two plastic bags).

To assemble the jars, layer the pound cake cubes, whipped cream, strawberries, and blueberries in jars. For best results, use thin layers of whipped cream and wipe the inside of the jar with a paper towel between each layer. For the effect of strawberries against the glass, slide each slice along the inside of the jar as you place it and fill behind the strawberries in the center with whipped cream so they stand out.

Optional: After the final layer of whipped cream, add fresh mint, strawberry slices, and a few blueberries for decoration.

You can serve them immediately or refrigerate up to a day later.

Makes 2-4 jars, depending on the size of jars.
