New Mexican Green Chile

(Adapted from Bueno Green Chile Recipe)

1 Tbsp vegetable oil
1 pound lean stew meat (1/2" cubed if possible)
3 small red potatoes (cubed)
1-13oz container of Bueno Green Chile
4 cloves of fresh garlic (minced)
1/2 tsp salt

1. Heat oil in large pot or cast iron dutch oven. 
2. Add meat and brown over low heat for about 4 minutes (until all sides are mostly browned)
3. Add cubed potatoes and brown for four more minutes, stirring occasionally. 
4. Add garlic and salt, stir, add chile. Stir and bring to a boil. 
5. Lower heat, cover and simmer for 20 minutes. 

Serve with two flour tortillas for a hearty meal. Add a glass of milk for those who can't handle the heat!
