Baked Parmesan zucchini

Recipe Baked Parmesan zucchini  from Easy Cook

Serves: 3-4  

8 small zucchinis, halved lengthways
Salt and pepper
6 plum tomatoes, chopped
2 garlic cloves, crushed
1 chili, deseeded and finely chopped
1 tsp fresh rosemary, finely chopped
Olive oil
4 tbs breadcrumbs
6 tbs parmesan cheese, grated

1. Scoop the seeds from the middle of each zucchini half.
2. Put them in an ovenproof dish and season.
3. Mix together the tomatoes, garlic, chili and rosemary with a slug of olive oil and season.
4. Mix together, in a separate bowl, breadcrumbs and grated parmesan. Set aside
5. Pile the mixture into the zucchinis, then cover the dish with foil.
6. Bake at 200˚C for 30 minutes or until tender, then remove the foil and scatter the breadcrumb mix over.
7. Drizzle with olive oil and bake for another 20 minutes until golden and crisp.
