Turkey in an envelope

Serves: 4

4 turkey fillets
400 g frozen puff pastry or 2 packages fresh, ready-made puff pastry
20 g butter
60 g finely minced turkey meat or beef
1/3 cup sour cream
1 egg
1 ½ tbs fresh or dried herbs (basil, sage and parsley)
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
Pinch nutmeg
1 cup ground hazelnuts
1 egg yolk
1 tbs milk

1. If the puff pastry is frozen, remove it from wrappings and thaw.
2. Brown well turkey fillets in butter, remove from pan and allow to cool.
3. Meanwhile, combine minced meat with cream, eggs and herbs, season with salt, pepper, add paprika and nutmeg.
4. Coat fillets with thick layer of this mixture.
5. Roll thawed pastry out slightly on floured surface until 1 cm thick. Sprinkle with hazelnuts (which I simply forgot to do!).
6. Cut pastry into 4 squares to fit turkey fillets. Place one fillet on each square, brush edges with water, fold around meat and seal well.
7. Brush pastry with beaten yolk and milk.
8. Place pastry parcels on cold baking sheet that has been rinsed in cold water and left wet.
9. Bake in an oven at 190˚C for 30 minutes.
