Tempting and succulent char-grilled stuffed calamari (squid)

10 large calamari (squid), cleaned
2 anchovy fillets
2 thin prosciutto slices
8 tbs olive oil
2 garlic cloves
1 handful parsley
2 handfuls basil
1 cup homemade breadcrumbs
2 tbs Parmesan cheese, grated
Salt and pepper
2 large, ripe tomatoes


1. Put anchovy fillets, prosciutto, 4 tablespoons of olive oil, garlic cloves and a handful each of parsley and basil into the food processor until finely chopped.
2. Add the squid tentacles and chop.
3. Add breadcrumbs and grated Parmesan, stir the mixture until well mixed.
4. Season with pepper and salt, if needed (the mixture is already salty with anchovies and prosciutto).
5. Stuff the calamari, and close the open end with a toothpick.
6. Make the sauce by chopping tomatoes and heating them gently in a pan with 4 tablespoons of olive oil, a handful of basil leaves, salt and pepper.
7. Brush the calamari with olive oil and grill or barbecue them.
8. Serve with the sauce and focaccia bread.
