Aromatic stuffed pancakes

Ingredients:
4 pancakes
A pinch of dried thyme and ground white pepper
Salt
100g baked or cooked meat
20g of ham or bacon
½ small onion, chopped
½ tsp olive oil
1 egg
¼ tsp dried thyme
¼ cup grated Swiss cheese
1 cup béchamel sauce (see the recipe here)

Method: 
1. Make pancake batter in a usual way, but instead of "sweet" extras, use salt, pepper and thyme.
2. Cook pancakes in a non stick pancake skillet. Set aside.
3. Mince meat and ham or bacon in food processor or blender.
4. Sauté onion briefly in olive oil until tender, add to the minced meat.
5. Add egg, thyme and Swiss cheese, mix and combine.
6. Spread the mixture evenly on each pancake, top with a little béchamel, fold.
7. Place stuffed pancakes in an ovenproof dish, top with the remaining béchamel.
8. Cook pancakes, covered, in a microwave oven for 8-10 minutes on MAX.
Serve with fresh cucumber salad.
