3 in 1 savory rolls by mignonne

Ingredients: 

150g Arborio rice
2 onions, chopped
400 g button mushrooms, cut into slices
2-3 leeks, sliced into rings
200g fresh spinach, sliced into strips
500 g thin filo sheets
Salt and pepper
Oil and mineral water

Method:
1. Cook rice according to the manufacturer’s instructions. Set aside to cool.
2. Sauté onion in hot oil, add button mushrooms and simmer for 5 minutes or until soft. Season with salt and pepper. Set aside.
3. Sauté leeks in hot oil for 5 minutes or until wilted. Add salt and pepper. Season with salt and pepper. Set aside.
4. Divide rice into three equal portions. Add mushrooms to one portion, leeks to the second, spinach to the third. Stir to combine.
5. Place 3-4 filo sheets one on top of another; sprinkle each sheet with some oil and mineral water.
6. Spread mushroom and rice filling along the long edge of the top filo sheet, roll and fold and place on a baking sheet lined with parchment paper or silicone base. Brush the roll with little oil.
7. Repeat step 6 with the remaining fillings.
8. Bake in the oven at 200˚C for 30 minutes or until the rolls are golden.
9. Cover the rolls with linen cloth or aluminum foil and let stand for 10 minutes.
10. When cooled slightly, cut into small pieces and serve with green salad.
