Tasty, savory and easy to make pan grilled chicken

4-6 chicken pieces (thighs, drumsticks, breasts)

For the marinade:

2 tbs olive oil
Juice from ½ lemon
1 tbs Dijon mustard
1 tbs (runny) honey
Granulated or pressed garlic
¼ tsp dry thyme leaves
½ tsp salt
½ tsp pepper


1. Remove skin and visible fat from the meat.
2. Mix all the ingredients for the marinade and cover each piece of meat with it.
3. Leave meat to marinate for at least 1 hour, better overnight (honey is an excellent meat softener!).
4. Heat a grill pan and grill the chicken pieces. Grill them on one side only for about 10 minutes. After 2 minutes, reduce the flame.
5. Turn the meat on the other side and grill it for 10 minutes or until completely done.

Easy suggestion: since the pieces of meat are unevenly thick, some maybe slightly underdone. To be sure they are all properly done, you may microwave them for a 2-3 minutes in.
