Oven-baked hake with vegetables and lovage

Serves: 2-3

400g zucchini, thinly sliced
20 black olives, pitted, cut in half
1 tomato, cut into cubes
1 clove garlic, chopped
Handful of lovage and parsley leaves, chopped
1 tbs olive oil
Sea salt
2 hakes, cleaned

For the hake filling:
Handful of lovage and parsley leaves, chopped
1 clove garlic, chopped
1 tbs olive oil for coating

1. In a bowl mix zucchini, olives and tomato.
2. Sprinkle with garlic, lovage and parsley. Season with salt if needed (olives are already salty!).
3. Pour olive oil onto vegetables, mix.
4. Season the fish, from outside and inside, with salt.
3. Fill the fish cavity with parsley, lovage and garlic.
4. Lightly coat the fish with olive oil.
5. Line a baking pan with Al foil long enough to completely cover the fish and vegetables.
6. Place vegetables in the pan, lay the hake on top and cover with foil.
7. Bake in oven for 15 minutes at 200˚C. Remove the foil and continue to bake for additional 15 minutes.
Serve with cold potato salad.
