Muffins with olives, ham and rosemary

150g cooked ham

80g seedless black or green olives, roughly chopped

225g plain flour

2 tsp baking powder

1 tsp salt

80g butter, melted

2 eggs, lightly beaten

1 container plain yogurt (app. 200ml)

20 ml milk

½ tbs Dijon mustard

1 tsp finely chopped fresh rosemary, or ½ tsp dry rosemary leaves

1 tsp finely chopped fresh oregano, or ½ tsp dry oregano leaves


1. Finely chop the ham, with a knife or in a blender (coarse chopping).

2. Sift the flour, baking powder and salt into a large bowl. Set aside.

3. Melt the butter in a microwave (1-2 min on Max).

4. Whisk butter, milk and yogurt into the lightly beaten eggs until smooth.

5. Stir in mustard, rosemary and oregano. Mix and combine.

6. Add ham and olives, mix and combine.

7. Add the flour mixture to the wet mixture until, stir carefully until everything is barely moistened (dry lumps are o.k.).

8. Preheat the oven to 190ºC, spray the muffin cups with some oil or use silicon cups.

9. Fill only ¾ of the muffin cup with the mixture and bake for 20 minutes or until done (test with a toothpick).
