Pears in wine and vanilla sauce

140 ml dry white wine
2 tbs lemon juice
1 vanilla pod
Few drops of vanilla essence
2 tbs sugar
300 ml water
4 firm but ripe pears

1. Put the wine, lemon juice, vanilla pod, a few drops of vanilla extract and sugar in a large saucepan with 300ml water. Stir gently until all the sugar has dissolved.
2. Peel and halve the pears, but do not core them.
3. Add the pears to the wine mixture. Bring to the boil, then simmer, covered, for 12-15 minutes. Pears should look slightly translucent, but be still firm.
4. Using a slotted spoon, take out the pears and place in a bowl. Boil the wine mixture again to reduce it slightly. Add a little vanilla essence if wished.
5. Strain the syrup over the pears. Leave to cool, cover and refrigerate until serving.
