Pork Chops in Wine Sauce

Serves: 4

2 garlic cloves, chopped
2 tsp fresh, chopped sage or 1 tsp dried
2 tsp fresh, chopped rosemary or 1 tsp dried
1 tsp salt
A pinch of black pepper
4 pork chops without bones
1 tbs butter
1 tbs olive oil
¾ cup dry white wine

1. Combine the garlic, sage, rosemary, salt and pepper.
2. Press a little of this mixture firmly into both sides of each of the pork chops.
3. In a heavy skillet, melt the butter and the olive oil. Brown the pork chops on both sides.
4. Remove from pan and set aside.
5. Add two-thirds of the dry white wine to the pan and bring to boil.
6. Return the pork chops to the pan, cover, reduce heat and simmer about 30 minutes until the chops are tender.
7. Remove the pork chops to a heated plate.
8. Add the remaining one-third of the wine to the skillet and boil down to a syrupy glaze.
Pour over the chops and serve.
