Tender pork chops with heavenly, creamy zucchini sauce

Preparation time: 10mins + 30 mins for marinating

Serves: 4 

4 boneless pork chops
6 small zucchinis
2 cloves garlic, roughly chopped
2 tbs olive oil
1 cup cream
1 bunch chives, chopped
2 basil branches, chopped
juice of ½ lemon
salt and pepper

1. Marinate (marinade recipe here) the pork cutlets, if desired, for about 30 minutes.
2. Slice the washed zucchini lengthwise, then into long sticks.
3. Fry the zucchini and garlic in hot oil, in a non stick pan, for about 2 minutes.
4. Reduce heat and simmer for a few minutes.
5. Add cream, chives, basil, lemon juice, salt and pepper, stir and cook over low heat for 2 minutes.
6. Heat the grill or plain non stick frying pan and cook marinated steaks for about 10 minutes on each side or until they are well browned and crispy (or as desired).

Serve the cutlets with (elongated capunti) pasta and zucchini sauce.
