Apple cake by mignonne

Serves: 4-6

Ingredients: 

150g butter at room temperature
100g sugar Demerara
3 eggs
½ bottle of vanilla extract
300g flour
600g apples, peeled, cleaned and coarsely chopped


Method:  
1. Mix butter and sugar until creamy.
2. Add eggs, one at a time, stirring constantly.
3. Stir in vanilla extract.
4. Gradually add flour, stir constantly.
5. Stir and distribute evenly apples into the batter.
6. Spread mixture into a narrow baking shape lined with parchment paper.
7. Bake at 175˚C for about 50 minutes or until the cake is baked (a trick with a toothpick).
Serve warm or completely cooled.
