Creamy white bean soup

400 g canned white beans
2 tbs olive oil
½ onion, chopped
1 celery stalk, thinly sliced
¼ tsp white pepper
3 tbs sour cream
Pinch of dried thyme
Chopped parsley to sprinkle

1. In a food blender process to a puree consistency most of the beans (300g) and ¾ cup water.
2. Sauté briefly onion and celery in olive oil until onion becomes translucent.
3. Add mashed beans and water (the amount depends on how thick you want your soup to be), season with salt and pepper.
4. Cook the soup over low heat for 10 minutes.
5. Meanwhile, chop coarsely the rest of the beans (100g), with the addition of cream, in a food blender (be careful not to puree this batch).
6. Stir coarsely chopped beans and thyme into the soup, cook for 2-3 minutes.
7. Add chopped parsley to the soup before serving.
