French vegetable soup by mignonne

Ingredients:
1 onion, chopped
1 leek, chopped
1 tbs olive oil
200 g yellow string beans
2 potatoes, cubed
½ small zucchini, cubed
Sprig of greens
Bay leaf
Salt and pepper
50g small pasta - mini pipe rigate
120 g canned beans
120g chopped canned tomatoes
2 cloves garlic, minced
A little fresh basil, chopped
2 tbs olive oil
Parsley, chopped

Method:
1. Sauté onions and leeks in olive oil until wilted.
2. Add string beans, potatoes, zucchini, greens and bay leaf, stir.
3. Cover the vegetables with 800-900ml water. Season with salt and bring to a boil, then reduce heat and cook, half covered, for 30 minutes or until vegetables are tender.
4. Add pasta, beans and tomatoes, increase the heat and cook for 10-15 minutes or until pasta is al dente.
5. Mix oil with garlic and basil, add pepper, and pour over vegetables in the soup. Stir to combine.
Sprinkle with parsley and serve immediately.
