Fried Rice

3 cups cooked white rice (day old or leftover works great)

3 tbsp sesame oil

1 cup frozen peas and carrots (thawed)

1 small onion, chopped

2 tsp minced garlic

2 eggs, slightly beaten

1/4 cup soy sauce

1. Heat the oil in a large skillet or wok over medium high heat. Add the peas, carrots, onion and garlic. Saute until tender. 

2. Move veggies to one side, lower heat to medium low, and add the egg to the empty side of the skillet. Cook until eggs are scrambled and cooked.

3. Add the rice and soy sauce and stir well. Saute until heated through.
