1/2 cup butter, softened
1 cup sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3 tablespoons baking cocoa
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup grated unpeeled zucchini
1/2 cup semisweet chocolate chips
1. Cream the butter and sugar in a large bowl until light and fluffy. Beat in the eggs and vanilla.
2. In a separate bowl, combine the flour, cocoa, salt, baking soda and cinnamon. Gradually add the flour mixture to the creamed mixture just until moistened.
3. Fold in zucchini and chocolate chips.
4.Spoon into a greased 8-in by 4-in loaf pan and bake at 350 degrees for 60-70 minutes OR spoon into a cupcake pan lined with paper cups (fill 2/3 to 3/4 full) and bake at 350 degrees for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool on wire racks.
