One Pot Black Beans

  • 1/4 cup onion, diced
  • 1 teaspoon olive oil
  • 1 - 15 oz. can low sodium black beans
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon pepper
  • dash of salt
  • Juice of 1/2 of a lime
Sauté diced onions in olive oil over medium heat in a medium sized pot. Cook until translucent and slightly browned.

Next, dump in the entire can of black beans, liquid and all. Add all of the remaining ingredients and cook on medium for about 15 minutes or until liquid is slightly thickened. 

And that's it! These beans are perfect as a side dish, or just eating on their own!
