Thai Fish cakes
This recipe is really quick, easy and tasty. Makes approx 18, delicious hot or cold
It is the ideal way to use some of the fish that is not as nice pan fried.
Roughly chop 750g firm white fish fillets and place into a food processor.
Add 2 tablespoons curry past, 1 egg, 2 teaspoons crushed garlic, 4 chopped green onions and 1 tablespoon fish sauce.  Process until combined.
Heat a small amount of oil in a shallow pan and fry spoonfuls of the mixture until golden brown. Drain on paper towel and serve with sweet chilli sauce, garnished with coriander sprigs.



Beer Batter
1 cup of plain flour
a pinch of salt
60g of melted butter
2 eggs, lightly beaten
1 cup of beer
1 egg white, stiffly beaten
extra flour as needed
Sift flour through butter and eggs. Gradually add beer and stir until smooth. Cover and stand for 1 hour in a warm place. Just before using, fold in the egg white. Flour the fish and then coat with the batter. Cook in a small amount of extra virgin olive oil for 2 to 4 mins on each side.
