Pancetta Wrapped Halibut with Summer Veggies

1 Small Zucchini, Sliced into thin rounds

1 Large Tomato, Peeled, seeded and diced

1/2 Yellow Onion, Sliced

3 Cloves of Garlic, Minced

1 tbsp Minced Fresh Basil

1/2 tsp Minced Fresh Oregano

3 tbsp Olive Oil

Salt & Pepper

3 Halibut Filet's (about 4-6 oz each)

1/2 Lemon

7 Slices Pancetta


1. Preheat oven to 375º. Chop the zucchini, onion, tomato, garlic, basil & oregano. Add 2 tbsp if olive oil, 1/2 tsp of salt and 1/2 tsp pepper and place in a bowl woth veggies.

2. Toss the vegetables and spread evenly in a baking dish, place in the preheated oven while you prepare the fish.

3. Season the fish with salt and pepper and squeeze the lemon half over it. Wrap the pancetta pieces around the fish and use a toothpick or skewer to secure it. Heat the remaining 1 tbsp of oil in a pan over high heat. Add the fillets and sear on the first side, about 1 minute. Carefully turn and cook for 2 more minutes.
