BBQ Pulled Pork Stuffed Peppers


Two bell peppers ( I suggest yellow, orange, or red. They are more sweet that the green bell peppers.)
Two Cups of your pulled pork
BBQ sauce (I suggest the HEB brand Texas)
White rice to serve on the side (It really ties everything together)


1. Preheat your oven to 400 degrees.
2. Cut the tops of the bell peppers and remove the seeds and membrane.
3. Mix the BBQ sauce with the pulled pork in a bowl. I used about 1/2 the bottle.
4. Stuff the peppers with the BBQ pulled pork.
5. Place the peppers in the oven for one hour. At thirty minutes, put 1-2 Tbs of BBQ sauce on top of the peppers. Then continue to cook for the remaining time.
