Banana chip muffins


1 cup butter softened
1&1/2 cup sugar (I use organic unrefined)
2 eggs
2 teaspoons vanilla
4 tablespoons sour cream
4 cups flour (I use King Arthur)
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
2 cups mashed banana
1 cup mini chocolate chips plus extra to sprinkle on top of muffins


-Preheat oven to 350 degrees
-line muffin tins (this recipe makes 24-28 muffins)
-combine flour, baking soda, salt, and cinnamon, set aside
-cream butter and sugar until creamy, beat in eggs and vanilla, add banana and sour cream mix until blended
-add flour combo in two portions mixing until blended
-stir in 1 cup chocolate chips
-fill lined muffin liners about 3/4 full
-sprinkle with chocolate chips
-bake at 350 degrees for 18-22 minutes until a toothpick inserted in the center comes out clean.
