Breakfast Cookies

1/2 cup butter (I like Smart Balance)

1/2 cup peanut butter

1/3 cup sugar

1/3 cup packed down brown sugar

1/2 teaspoon baking soda

1 large or extra large egg

1/2 teaspoon vanilla

1 cup flour (if you want to make it even healthier, I bet you could substitute

   whole wheat pastry flour)

1 cup quick rolled oats

Cream butter and peanut butter with mixer, then add sugars and baking soda. Add egg and vanilla. Stir in flour and oats.

Spoon a rounded teaspoonful about 2 inches apart on cookie sheet. I gave mine a quick spray with vegetable oil even though the original recipe says ungreased.  Bake for about 8 minutes in a preheated 375 degree oven.Makes about 2 1/2  to 3 dozen.
