Sausage, baked beans and potato bake

Equipment: Cast iron 30cm pan or large frying pan and open-proof dish.


1 tbsp Oil, vegetable or sunflower

8 Pork sausages

1 Onion, sliced

2 Carrots, diced

1 tbsp (15ml) Plain Flour

¼ pint (140ml) Milk

1 tbsp (15ml) Henderson's Relish or Worcestershire Sauce

1 tbsp (15ml) Tomato purée

400g tin Baked Beans

1lb (500g) Potatoes, unpeeled, sliced thinly

3½ (100g) Grated cheese


1. Pre-heat the oven to 200°C/Gas mark 6.

2. Heat the oil in the pan and brown the sausages.

3. Add the onions and carrots then cook until the onions have softened.

4. Sprinkle over the flour and cook for 1 minute while stirring.

5. Mix in the milk and stir until thickened.

6. Add the Henderson's or Worcestershire Sauce, tomato purée and baked beans. Stir until all combined.

7. If needed transfer to an oven-proof dish.

8. Layer the sliced potatoes on top.

9. Sprinkle over the cheese.

10. Cook for 20 minutes.
