Sausage and potato traybake

Equipment: 1 large oven proof dish


1tbsp Olive oil

1 Onion, peeled and sliced into thin wedges

8 Sausages

4 Sprigs of fresh rosemary

1lb (500g) Maris Piper potatoes cut into wedges

1 Red pepper, sliced

1 Yellow pepper, sliced

2 Carrots, cut into batons


1. Pre-heat the oven to 220°C/Gas mark 7.

2. Put the olive oil into the oven proof dish and then add the onion. Stir the onion so it is coated by the olive oil. Cook for 10 minutes.

3. Reduce the oven temperature to 200°C/Gas mark 6.

4. Add the sausages and stir so they are covered by the oil. Snip the rosemary over the sausages. Then add the potatoes, peppers and carrots and stir it all together.

6. Cook for a further 25-30 minutes, turning the mixture regularly to ensure everything is browned evenly.
