1 cup of pistachio nuts
1 cup almonds
(alt: cashew, macadamia, sunflower, peanuts)
in a 400 degree oven for about 4 minutes. (8-10 minutes might be better)
1 tablespoon whole coriander seed
1 teaspoon fennel seeds
1 tablespoon whole cumin seed
for a few minutes in a skillet or the oven. Let both cool.
Grind the nuts in a cuisinart until they're bread-crumb like, but not peanut-butter like.
Grind the spices in a spice grinder, and mix with
1/2 teaspoon dried thyme
1/4 cup sesame seed
1/4 teaspoon salt (or none at all)
1/4 t cayenne
1/2 t smoked paprika (perhaps a little less if it's fresh)
1 to 2 t ground pepper
and then mix with the nuts. Store in the fridge in a sealed container.
