Chocolate Chip Banana Bread

Ingredients (makes 1 loaf):

2 cups flour

1 tsp baking soda

1/4 tsp salt

1/2 cup butter, softened

3/4 cup brown sugar

2 eggs, room temp

2 tsp vanilla paste (sub vanilla extract)

3 very ripe bananas, mashed

2 cups semi-sweet chocolate chips


1. Preheat oven to 350º. Grease a standard loaf pan with cooking spray.

2. In a large mixing bowl, add flour, baking soda, and salt. Whisk to combine.

3. In a separate large mixing bowl, cream butter and sugar with a hand-mixer until light and fluffy. Mix in eggs. Mix in vanilla paste. Mix in bananas. With a spatula, add flour mixture and stir until just moistened. Pour batter into prepared loaf pan.

4. Bake in preheated oven for 60-65º. I like to take the temperature of my quick breads, and I pull them at 190º. Cool in the pan for 10 minutes, and then remove to a cooling rack. Cool completely before storage.
