Cranberry Apple Stuffing
Who doesn't love them some stuffing?! Definitely one of my guilty pleasures! This recipe includes craisens, apples, and sausage to make a stuffing that's very festive for fall... enjoy :)

Recipe

1 loaf of bread (i used a combo of white and wheat)
3 suasage links
2 apples, chopped
1/3 c. craisens
1 red onion, diced
1 single stalk celery, diced
1 tsp. carroway seeds
3/4 c. butter
2 c. chicken stock
fresh parsley, chopped
S&P

Using a serrated knife cut the bread into 1 inch cubes. Spread bread cubes out onto baking sheets and broil or bake just until cubes are slightly toasted. Remove bread cubes from oven and arrange them into a large cassarole dish. Next, remove sausage from casing and brown it in a frying pan, breaking it up into small crumbles. Drain sausage then add onion and celery to pan and continue cooking until tender. Add apples, craisens, carroway seeds, butter, and S&P. Once butter melts add chicken stock. Pour this mixture gradually overtop of bread cubes, folding as you go until it is all incorportaed and bread is well moistened (you may not need exactly 2 cups, just use your judgement.) Top with fresh parsley. Bake at 350 for about 20 minutes.

Pear and Gorgonzola Pizza
Homemade pizza is one of the funnest things to make! I usually always start with a store brought pizza crust and then let my imagination go from there. I love using funky and exotic toppings. Some of my favorites include: apples, chicken, bbq sauce, and swiss... peaches, prosciutto, and mozzarella.... grapes, rosemary, and provolone... and of course buffalo chicken which is always a crowd pleaser. Whether cooked in the oven or on top of the grill pizza is relatively easy to make and serves as a great appetizer, dinner, or late night snack. In this recipe I use pears, red onion, gorgonzola, mozzarella, and walnuts. It was delicious and really made people's heads spin!

Recipe

1 pizza crust (i used a prebaked boboli type)
1 T. olive oil
4 oz. mozzarella
4 oz. gorgonzola crumbles
2 pears
1 small red onion
1/4 c. chopped walnuts

Brush top of pizza crust with olive oil. Slice the pears and onions then arrange them on top of the pizza crust so they are distributed evenly. Sprinkle on cheeses. Top with walnuts and season with salt and pepper. Bake or grill until cheeses are melted and crust is crisp, about 10-15 minutes.
