Grilled Pork Chops with Chipotle Honey Sauce

4 boneless center pork chops
3 canned chipotle peppers in adobo sauce
1 Tablespoon adobo sauce
1/4 cup honey
2 Tablespoon balsamic vinegar
2 Tablespoons Dijon mustard
2 garlic cloves
2 Tablespoons lime juice
1 Tablespoon oil
1/4 teaspoon salt
1/4 teaspoon pepper

In a food process, blend all the ingredients together, except for the pork chops, until blended and smooth.  Reserve half of the sauce.

Place the pork chops in a Ziploc bag and pour half the marinade over the pork.  Seal bag and let marinate in the refrigerator for at least 1 hour.

Preheat grill to 400 degrees.  Remove pork from bag and discard marinade.  Place the pork directly on the grates and allow to cook for 4-5 minutes on each side or until cooked through - internal temp 145-150 degrees.  Serve with reserved sauce and enjoy!
