Chicken and Goat Cheese Pasta

1 teaspoon olive oil
3/4 lbs chicken tenders, cut into bite size chunks
1 red pepper, thinly sliced
2 garlic cloves, minced
1 teaspoon Italian herb mix
1/2 teaspoon red pepper flakes
3 oz goat cheese
1/4 - 1/2 cup white wine or chicken broth
12 oz penne pasta
salt and pepper


Cook pasta according to package directions. Drain, reserving 1/2 cup of the pasta water.

Meanwhile, heat the oil in a skillet over medium heat. Add the chicken and cook until no longer pink, about 5-8 minutes. Add the pepper and cook another 3 minutes, stirring occasionally. Add the garlic and cook 1 minute. Stir in the Italian herb mix, pepper flakes, and white wine/chicken broth. Let everything simmer for 2 minutes and then stir in the goat cheese. Toss in drained pasta. If the pasta is to dry, stir in pasta water, a little at a time. Season to taste with salt and pepper. Serve and enjoy!
