1 package Nabisco chocolate wafers
4 tbsp butter, melted
30 regular sized marshmallows (not the small ones)
1/2 cup milk
1 cup heavy cream
1 cup chocolate chips or shaved dark chocolate
Preheat oven to 350 degrees.
Place the cookies in a large plastic bag and then smash the heck out of them using the bottom of a glass, a meat mallet or whatever ya got. You want fine crumbs but it's okay to have small pieces of cookie in there, too! Pour in the melted butter and mix until combined.
Spray a pie dish with cooking spray and then press in the cookie crumbs. Press the crumbs down in the pan and along the sides with your hands to form a crust. Place crust in oven and bake for 10 minutes. Remove and let cool completely.
To make the filling, place marshmallows and milk in a double boiler OR in a small pot set over a large pot of simmering water. Melt the marshmallows and milk together completely and stir well. Then, remove from the heat and let cool completely (this will take about 20 minutes).
Whip your cream until soft peaks form. Gently, fold in the melted marshmallow mixture to the whipped cream and add the chocolate chips. Stir gently then pour filling into baked (cooled) crust. Place pie in fridge and let chill for 2 hours before serving.
3 hours (includes time to chill pie)
** You can also use either a graham cracker crust or a vanilla wafer crust in this recipe! Here's a recipe for the graham cracker crust I use most often and love.
