Jicama Mango Salad with Zesty Lime Vinaigrette

Ingredients:

1 jicama, peeled and small diced

1 large mango, peeled and small diced

4 green onions, thinly sliced (white and light green parts only)

5-6 cups arugula or spring mix

dressing:

juice of three limes

2 T extra virgin olive oil

2 tsp ground cumin

pinch of salt

Directions:

Toss all salad ingredients together in a large bowl. In a small bowl, whisk together all dressing ingredients and just before serving, toss everything together.
