Jam Crumb Bars


3/4 cup dark brown sugar

3/4 cup unsalted butter, cold and sliced into small pieces

1 1/2 cups oats {old fashioned or quick}

1 1/2 cups flour

1 tsp cinnamon

1/2 tsp baking soda

1/2 tsp sea salt

1 cup jam of choice -- I love raspberry!


Preheat oven to 350 degrees. Spray a 9 x 13" pan with cooking spray.

Mix together the brown sugar, oats, flour, baking soda, salt and cinnamon in a large bowl. Cut in the cold butter and blend with your fingers until the mixture gets all crumbly and there are no large butter clumps left.

Press mixture into the bottom of your pan, reserving about a half cup of crumbs. Spread jam over your crust and sprinkle remaining crumbs on top.

Bake for 45 minutes then let cool for 25 minutes before slicing into squares or bars.
