greek tofu salad

Ingredients:

1/2 red onion, sliced

1/2 cup pitted kalamata olives

1 can artichoke hearts

1 large cucumber, peeled and chopped

6 oz cubed feta cheese

8 oz extra firm tofu, cut into cubes

4 large basil leaves, torn

2 T extra virgin olive oil

2 T red wine vinegar

1 tsp dried oregano

1/2 tsp sea salt

1/2 tsp black pepper

Directions:

In a large bowl, toss together all ingredients. Place in the fridge and let marinate for at least an hour before serving.

Time:

10 minutes to make, 1.5 hours including marinating time
