Persimmon Pomegranate Salad

Persimmons are high in vitamin A and vitamin C as well as dietary fiber.  Fuyu persimmons are sweet, but firm, and are especially refreshing in this salad.  Pomegranate seeds are also high in vitamin C and dietary fiber, and add a nice tartness. Hazelnuts are high in vitamin E and add a nice crunch. 

Persimmon Pomegranate Salad:

2 fuyu persimmons

8 cups mixed baby greens

½ cup pomegranate seeds

¼ cup toasted hazelnuts


Clementine Salad Dressing:

4 tablespoons light olive oil

4 tablespoons fresh clementine juice

salt and pepper, to taste


Slice persimmons into wedges, cutting off stem caps.


Whisk Clementine Salad Dressing ingredients together.


To serve, place a handful of baby greens on a salad plate.  Top with persimmon slices, pomegranate seeds and toasted hazelnuts.  Drizzle Clementine Salad Dressing on top.


Serves 4-6.
