Korean Summer Squash Salad

You can substitute zucchini for the summer squash.  If you spiral-slice the summer squash, cooking time will be very short; sliced squash will take a minute or two longer.


  • 2 summer squash, thinly sliced into half-moons, or julienned
  • 1 tablespoon olive oil
  • 2-3 cloves garlic, crushed
  • salt to taste
  • 1 teaspoon toasted sesame seeds, ground 


  1. Saute summer squash with olive oil and garlic until just tender. 
  2. Season with salt to taste. 
  3. Sprinkle with ground sesame seeds.
