Korean Scallions Salad "Banchan"

Ingredients:
  • 1 bunch scallions, shredded
  • 2 teaspoons gluten-free soy sauce
  • 1 teaspoon organic sugar
  • 1 teaspoon sesame salt (toasted sesame seeds, ground up)
  • 1/2 teaspoon crushed garlic
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon Korean red pepper flakes

Directions:

  1. Soak shredded scallions in cold water for 15 minutes to decrease the oniony pungency. Strain.
  2. Combine remaining ingredients in a bowl. 
  3. Add scallions and toss gently to distribute the seasonings evenly.
  4. Serve immediately, as scallions will wilt.
