Fresh Snow Pea or Sugar Snap Pea, Radish and Mint Salad

  • A few handfuls of fresh Snow Peas or Sugar Snap Peas, trimmed and cut into bite-size pieces
  • A handful of radishes, trimmed and cut into small chunks
  • A few teaspoons rice vinegar, to taste
  • A drizzle of Extra Virgin Olive Oil
  • salt, to taste


  1. If using Snow Peas, simply toss all ingredients together.
  2. If using Sugar Snap Peas, briefly blanch Sugar Snap Peas in boiling water, about 30 seconds. Rinse well with cold water and drain. Toss with the rest of the ingredients.
