Gluten-Free Cranberry Orange Muffins

Adapted from Pamela's Muffins. I wanted a moister muffin, so instead of water, I used non-dairy So Delicious Coconut Beverage. To make banana or pumpkin muffins, reduce the milk to 1/4 cup and add 1/2 cup mashed banana or cooked pumpkin.

Ingredients:

  • 1 1/4 cups gluten-free flour
  • 1/2 cup dairy-free milk
  • 1/4 cup organic sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • zest of half an orange

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together and spoon into 6 greased muffin cups.
  3. Bake for 18-20 minutes.
