Cilantro Pebre (Cilantro Salsa)

This is for cilantro lovers! There are lots of sharp flavors in this salsa, so a little goes a long way.


  • 1/3 cup scallions, minced
  • 1/2 cup cilantro, finely chopped
  • 4 medium tomatoes, chopped
  • 1 jalapeno pepper, seeded, minced
  • 2 tablespoons olive oil
  • juice of half a lime
  • 2 garlic cloves, minced
  • salt and pepper to taste


  1. Mix all ingredients together in a bowl and refrigerate.
  2. Serve with chips, or on top of grilled fish or chicken.
