Arugula and Tomato Salad

Ingredients:

  • 4 handfuls arugula
  • 1 tomato, diced
  • 3 tablespoons freshly grated Parmesan cheese
  • 3 tablespoons pinenuts, toasted
  • Lemon Olive Oil Dressing


Directions:

  1. To assemble salad, toss arugula and tomatoes together. Divide among 4 salad plates. Sprinkle Parmesan cheese and walnuts on top.
  2. Drizzle Lemon Olive Oil Dressing on top.

Make 4 servings.
