CHICKEN SALAD WITH PINEAPPLE MISO DRESSING

INGREDIENTS
Dressing:
1/4 cup unsweetened crushed pineapple
1/4 cup pineapple juice
1 tablespoon miso
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil

Salad:
4 cups mixed greens
1/2 cup shredded carrots
1/2 cup chopped almonds
1 cup pineapple


PREPARATION
  1. In a food processor combine all dressing ingredients and blend well. If dressing is too thick add more pineapple juice.
  2. Combine all salad ingredients, top with dressing and serve.
