Triple Chip Teenager Pleasing Cookies

1 1/2 C butter, softened
1 1/2 C sugar
1 1/2 C brown sugar
4 eggs
2 t vanilla
3 1/2 C all-purpose flour
1 C wheat flour
3/4 C rolled oats
1 t salt
2 t baking soda
2 t baking powder
1 (10 ounce) package peanut butter chips
1 (11 ounce) package butterscotch chips
1 C semi sweet chocolate chips


1. Preheat your oven to 350 degrees.
2. Into your stand mixer or large mixing bowl place 1 1/2 cups softened butter. Add 1 1/2 cups sugar and 1 1/2 cups brown sugar. Beat the mixture until well combined, should take about 2 minutes. 
3. Add 4 eggs and 2 teaspoons of vanilla. Beat for an additional 3 minutes, or until the mixture is light and fluffy. 
4. Into a separate bowl add 3 1/2 cups all-purpose flour, 1 cup wheat flour, 3/4  cup rolled oats, 1 teaspoon salt, 2 teaspoon baking soda and 2 teaspoons baking powder. Toss all of the ingredients together with a fork making sure they are well incorporated. 
5. Pour the dry ingredients into your stand mixer and mix until combined. 
6. Grab your chips. :) You need a whole package of peanut butter chips and butterscotch chips and just 1 cup of semi sweet chips. Toss them into the mixer and mix to incorporate. 
7. Roll the dough into 2 inch balls and place them on a cookie sheet you have sprayed with cooking spray.  
8. Bake for 8-10 minutes, or until the tops of the cookies start to crack. You don't want to over bake these beauties. Take them out of the oven before they are all the way cooked and allow them to rest on the hot cookie sheet for 3-4 minutes while they finish cooking. This will give you soft, chewy cookies.
